Davis Rollins Meat Loaf |

2 lbs. ground beef (20% fat) 2 eggs, beaten 1 sweet onion, diced 1 green bell pepper, diced 2 dashes Kitchen Bouquet 15 soda crackers, crumbled 1/4 cup Santa Cruz Hot Picante Sauce |
| Sauté onion and bell pepper over low heat until
soft, about 10 minutes. Mix
with beef, eggs and Kitchen Bouquet and mold into a loaf pan.
Spread Santa Cruz Hot Picante Sauce over loaf and sprinkle
cracker crumbs over the top.
Cook in a 375 degree oven for 30 minutes or internal temperature
reaches 160 degrees. Let
stand 15 minutes before serving. |
